Raspberry coconut nice cream

Made from only 4 ingredients including banana and raspberries, this better-for-you vegan ice-cream is a delicious after-dinner treat.

INGREDIENTS

  • 4 ripe bananas
  • 1 cup frozen raspberries
  • 165ml can coconut milk
  • Roasted coconut chips, to serve

METHOD

  1. Line a baking tray with baking paper. Peel and cut bananas into 4cm pieces. Place banana, in a single layer, on prepared tray. Freeze for 4 hours or overnight.
  2. Place frozen banana, raspberries and milk in a food processor. Process, scraping down sides occasionally, until smooth and creamy.
  3. Working quickly, spoon into serving dishes. Sprinkle with coconut chips. Serve immediately.
